Indulge in divine Raspberry brownie bites for a sweet treat!
Ingredients:
  • 200g dark chocolate, chopped
  • 200g butter, chopped
  • 275g caster sugar
  • 3 free range eggs
  • 150g plain flour
  • 35g cocoa powder
  • 60g sour cream
  • 150g fresh raspberries or frozen raspberries
  • 100g white chocolate, finely chopped
  • Icing sugar, to dust
Instructions:
  • - Preheat your oven to 180C while you grease and line a 20cm square cake pan.
  • In a saucepan, gently melt dark chocolate and butter together over low heat, stirring constantly for about 5 minutes until smooth. Let it sit for 5 minutes to cool slightly before using.
  • Mix the sugar and eggs into the chocolate mixture. Combine the flour and cocoa powder in a separate bowl, then fold into the chocolate mixture along with the sour cream. Gently mix in half of the raspberries and white chocolate. Pour the batter into the pan and top with the remaining raspberries and white chocolate.
  • Bake for 45 minutes or until a skewer inserted in the center comes out clean. Allow the cake to cool completely in the pan.
  • Transfer the brownie to a clean work surface. Cut it into 24 pieces using a 3.5cm round pastry cutter. Arranged the pieces on a serving platter and sprinkle lightly with icing sugar before serving.
