Air-fried raspberry brownie bites bursting with fruity flavor.
Ingredients:
  • 2/3 cup fresh or frozen raspberries
  • 2 tablespoons cashew butter
  • 2 tablespoons water
  • 4 ounces dark chocolate, chopped
  • 4 tablespoon unsalted butter
  • 1/4 cup canola oil
  • 1 egg yolk
  • 1/2 cup sugar
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • 1/3 cup all-purpose flour
  • 1/3 cup whole-wheat pastry flour
  • 2 tablespoons unsweetened cocoa powder
Instructions:
  • Gently spray cooking spray on 20 (13/4-inch) foil muffin cups.
  • In a small saucepan, gently cook the raspberries over medium-low heat, using a fork to stir and crush them until they break down (2 to 4 minutes). Next, transfer the mixture to a mini food processor and blend with cashew butter and water until smooth.
  • Combine dark chocolate, butter, and oil in a stainless-steel bowl. Melt over a double boiler, stirring occasionally. Remove from heat and stir until smooth. Allow to cool for 20 minutes.
  • In a separate bowl, whisk together egg, egg yolk, sugar, vanilla, and salt. Use an electric mixer on medium-high speed to beat the mixture until it thickens, which should take about 3 to 5 minutes.
  • Combine flours and cocoa powder in a small bowl, whisk until blended. Gradually fold half of the flour mixture into the egg mixture until fully mixed. While the mixer is on medium-low, incorporate the melted chocolate mixture until smooth.
  • Dollop 2 teaspoons of brownie batter into each muffin cup. Add 1 teaspoon of raspberry mixture on top, followed by 1/2 teaspoon of brownie batter. Place the filled muffin cups in the air fryer basket in a single layer, working in batches if necessary.
  • Preheat air fryer to 350°F (175°C).
  • Bake brownies in the preheated air fryer for 5 minutes until firm. Transfer to a wire rack to cool. Store brownies in the fridge, covered, for up to 3 days.
