Whip up a luscious raspberry curd, a versatile filling for cheesecakes and crepes. Effortlessly delicious!
Ingredients:
  • 6 tablespoons butter
  • 2 (6 ounce) containers fresh raspberries
  • 6 egg yolks, beaten
  • 2 tablespoons lemon juice
  • 0.25 teaspoon lemon zest
  • 0.125 teaspoon salt
Instructions:
  • Gently melt the butter in a saucepan over low to medium heat.
  • Combine raspberries, egg yolks, sugar, lemon juice, zest, and salt in a saucepan. Cook over medium heat, stirring constantly, until the mixture coats the back of a spoon and thickens slightly, about 8 to 10 minutes.
  • Pass the curd through a fine mesh sieve, using the back of a spoon to mash the raspberries.
