Raspberry Fruit Spread without Pectin

Try this simple raspberry spread with just raspberries, sugar, and lemon juice. No pectin needed to savor your summer harvest.
Ingredients:
  • 1 pound fresh raspberries
  • 1.5 cups white sugar
  • 2 tablespoons lemon juice
Instructions:
  • Mix together luscious raspberries, sweet sugar, and tangy lemon juice in a saucepan until well combined. Chill covered in the refrigerator overnight for maximum flavor infusion.
  • Check 3 jars for cracks and rust on rings, and discard any that are defective. Place them in simmering water until jam is ready. Wash new lids and rings in warm soapy water.
  • Bring raspberry mixture to a gentle boil over medium heat. Simmer uncovered for 40 minutes to 1 hour until thickened, stirring occasionally and skimming off any foam.
  • Immediately pour the vibrant raspberry jam into the jars, leaving a 1/4 inch space from the top. Glide a knife or thin spatula along the inner sides of the jars to eliminate any air pockets. Use a damp paper towel to clean the rims. Seal with lids and twist on securely.
  • 1. Position a rack in a large stockpot and fill halfway with water. 2. Gently place jars 2 inches apart into the boiling water using a holder. 3. Pour additional boiling water over the jars until they are submerged by at least 1 inch. 4. Cover the pot and bring to a rolling boil, then process for 10 minutes.
  • After boiling, carefully transfer jars onto a cloth or wooden surface, spaced apart. Allow to cool without disturbing for 24 hours. Check that the lids are secure by pressing the center gently. Remove rings and store jars in a cool, dark place.
