Refreshing rockmelon and raspberry fruit soup - a creative and delightful post-dinner treat.
Ingredients:
  • 1 (about 1 1/2 kg) rockmelon, peeled, deseeded, chopped
  • 1.10 gm vanilla extract
  • 60.00 gm caster sugar
  • 120g fresh raspberries
  • 8 ripe strawberries, chopped
  • Crushed ice, to serve
Instructions:
  • Combine the rockmelon, vanilla extract, and 2 tablespoons of sugar in a food processor. Blend until smooth, then strain through a sieve to create a silky fruit puree. Chill in the refrigerator until cold.
  • Process the raspberries and sugar in a food processor until smooth. Strain the mixture through a sieve to remove the seeds.
  • To plate, spoon the rockmelon puree into shallow bowls. Top with the strawberries, drizzle with the raspberry puree, and add a touch of crushed ice for a refreshing finish.
