Raspberry Fudge Brownies

Indulgent chocolate brownies with fudgy topping, raspberry cream cheese frosting, and chocolate curls for a beautiful finish.
Ingredients:
  • 1 cup white sugar
  • 2 eggs
  • 0.5 teaspoon vanilla extract
  • 0.5 cup butter or margarine, melted
  • 0.5 cup all-purpose flour
  • 0.33333334326744 cup unsweetened cocoa powder
  • 0.25 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.5 cup miniature chocolate chips
  • 0.5 cup evaporated milk
  • 1 egg yolk
  • 4 (1 ounce) squares semisweet baking chocolate, chopped
  • 6 ounces cream cheese, softened
  • 2 tablespoons seedless raspberry jam
  • 1 cup frozen whipped topping, thawed
  • 2 drops red food coloring
  • 16 chocolate curls
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and prepare an 8 inch square baking pan by lining it with aluminum foil.
  • Combine sugar, 2 whole eggs, and vanilla in a large mixing bowl until mixed. Add butter. In a separate bowl, mix flour, cocoa powder, baking powder, and salt. Stir into butter mixture until just combined. Gently fold in chocolate chips. Transfer batter to prepared pan.
  • Bake until a toothpick inserted in the center comes out with moist crumbs attached, for 25 to 30 minutes in a preheated oven. Allow the pan to cool on a wire rack.
  • In a small saucepan, gently warm evaporated milk and egg yolk while continuously stirring until it thickens slightly. Do not let it boil. Pour the hot mixture over 4 ounces of chopped semisweet chocolate in a bowl. Mix until the chocolate is melted and the mixture is smooth. Spread the filling over the cooled brownies and chill until firm for about 2 hours.
  • In a large bowl, mix the cream cheese and raspberry jam until smooth. Gently fold in the whipped topping and add food coloring if desired. Spread the frosting over the cooled brownies and use a cake comb for a decorative touch. Cut the brownies into 16 squares and then slice each square diagonally for triangles. For an extra touch, decorate with chocolate curls.
