Capture the essence of seasonal raspberries with a versatile liqueur - perfect for sipping solo, elevating cocktails, or sparkling up with club soda.
Ingredients:
  • 4 pints raspberries
  • 2 cups sugar
  • 3 cups vodka
  • 1 vanilla bean pod, optional
Instructions:
  • Prepare the raspberries: Using a potato masher or large fork, gently mash the raspberries with sugar in a large nonreactive bowl. Allow the mixture to sit at room temperature for an hour, loosely covered with a tea towel, allowing the sugar to dissolve.
  • Combine the vodka with the mixture and transfer it to an airtight container such as a large mason jar or screw-top liquor bottle. If desired, split the vanilla bean pod lengthwise and add it. Seal the container tightly and store in a cool, dark place. Shake the jar every two to three days for four weeks to steep the raspberry mixture.
  • After four weeks, strain the mixture through a fine mesh strainer lined with cheesecloth or a nut milk bag over a bowl. Repeat if needed until the liqueur is clear. Transfer the strained liqueur into a glass swing top bottle or mason jar.
  • Enjoy the liqueur: Serve it immediately to use in cocktails or with club soda. Alternatively, store it in a cool, dark place for up to two weeks for enhanced smoothness, especially when made with high-proof vodka.
