Raspberry tiramisu trifle: Layered with mascarpone, ladyfingers, and raspberries - an easy make-ahead delight.
Ingredients:
  • 0.25 cup white sugar, divided
  • 1 tablespoon lemon juice
  • 1 teaspoon water
  • 1 (8 ounce) container mascarpone cheese
  • 3 eggs, separated
  • 1 (3 ounce) package ladyfingers
  • 2 cups crushed ripe raspberries
  • 20 fresh raspberries
Instructions:
  • Mix together 1 tablespoon of sugar, lemon juice, and water in a bowl.
  • In a large bowl, whisk together mascarpone, egg yolks, and 3 tablespoons of sugar until the mixture is smooth and creamy using an electric mixer.
  • In a glass, metal, or ceramic bowl, whip egg whites until stiff peaks form, creating sharp peaks when you lift the beater or whisk. Gently fold in mascarpone cream.
  • 1. Submerge 2/3 of the ladyfingers in the tangy lemon juice mixture. Arrange the ladyfingers dipped side up and dry side down in a rectangular serving dish. Layer half of the crushed raspberries, then spread half of the luscious mascarpone cream over them. Add another layer of soaked ladyfingers, then scatter raspberries and finish with the remaining mascarpone. Top it off with a sprinkle of vibrant whole raspberries.
