Italian-inspired raspberry tiramisu with delicate ladyfingers and luscious mascarpone.
Ingredients:
  • 1 pound fresh or frozen raspberries
  • 6 tablespoons white sugar
  • 1 cup white sugar
  • 0.33333334326744 cup hot water
  • 0.25 cup brandy-based orange liqueur (such as Grand Marnier®)
  • 0.5 cup cold water
  • 4 egg yolks
  • 1 pound mascarpone cheese
  • 4 egg whites
  • 0.5 teaspoon vanilla extract
  • 12 ounces ladyfingers
  • 4 ounces grated semisweet chocolate
  • 3 tablespoons sliced almonds, toasted
Instructions:
  • Combine fresh, juicy raspberries with a generous amount of sugar in a bowl. Gently crush some of the berries to release their flavors. In a separate bowl, dissolve sugar in hot water, then mix in Grand Marnier and cold water to create a flavorful syrup.
  • In a bowl, whisk egg yolks with 6 tablespoons sugar until ribbons form, for about 5 minutes. Mix in mascarpone until smooth. In a separate bowl, beat egg whites until foamy, gradually adding 6 tablespoons sugar until stiff peaks form. Gently fold 1/3 of the whites into the mascarpone mixture, then fold in the rest until no streaks remain.
  • 1. Coat ladyfingers with Grand Marnier syrup, then arrange them in a 9x13 inch glass baking dish. 2. Layer raspberries on top of the ladyfingers. 3. Spread half of the mascarpone mixture over the raspberries. 4. Sprinkle chocolate shavings over the mascarpone layer, then add the remaining mascarpone mixture. 5. Finish off with toasted almonds on top. 6. Cover with plastic wrap and refrigerate overnight.
