Raspberry-coconut bars: Cookie dough base, raspberry jam, and coconut topping for year-round indulgence.
Ingredients:
  • 1 cup unsalted butter, softened
  • 2 tablespoons white sugar
  • 0.25 cup milk
  • 2 egg yolks
  • 2.5 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 cups seedless raspberry jam
  • 4 eggs
  • 2 cups sugar
  • 2 tablespoons softened butter, plus more for baking dish
  • 4 teaspoons vanilla extract
  • 1 (14 ounce) package sweetened flaked coconut
Instructions:
  • Begin by preheating your oven to 350 degrees F (175 degrees C) to ensure a perfectly cooked dish. Then, generously grease a 9x13-inch baking pan to prevent sticking and make cleanup a breeze.
  • In a bowl, use an electric mixer to beat together butter and sugar until creamy. Mix in milk and egg yolks until combined. In a small bowl, combine 2 1/2 cups flour, baking powder, and salt, then add this mixture to the dough and mix until combined. Press the cookie dough into the prepared baking pan.
  • Smoothly spread the raspberry jam over the bottom layer in the baking pan.
  • In a bowl, vigorously beat eggs until foamy. Incorporate flour until bright yellow. Add sugar and softened butter, continue beating until smooth. Gently fold in coconut. Spread topping evenly over jam.
  • Place in the preheated oven and allow to bake for 20 minutes until halfway through. Rotate the pan to ensure even baking and continue baking until the topping is fully set, for an additional 15 to 20 minutes. Once done, take out from the oven and let it cool on a wire rack before cutting into bars.
