Elevate your salad with toasted almonds, juicy raspberries, and tangy lemon dressing for a quick and delicious meal in just 25 minutes.
Ingredients:
  • 1/4 cup sliced almonds
  • 6 cups loosely packed torn Boston lettuce (about 1 large head)
  • 2 cups loosely packed torn romaine lettuce (about 1/2 bunch)
  • 1/4 cup chopped fresh chives
  • 1 container (6 oz) fresh raspberries (about 1 cup)
  • 3 tablespoons olive oil
  • 2 teaspoons grated lemon peel
  • 2 tablespoons fresh lemon juice
Instructions:
  • Toast almonds in a dry skillet over medium heat for 5 to 7 minutes, stirring often until golden brown. Cool before using.
  • Combine all dressing ingredients in a small bowl using a wire whisk until well mixed.
  • Combine lettuces and chives in a large bowl. Drizzle dressing over the mixture and toss well. Add raspberries and toasted almonds, toss gently, then serve right away.
