Brighten summer with a tomato and raspberry salad.
Ingredients:
  • 2 x 250g punnets cherry tomatoes, halved
  • 165.00 ml flat-leaf parsley leaves
  • 165.00 ml fresh mint leaves
  • 1 small red onion, cut into thin wedges
  • 125g raspberries, torn
  • 42.00 gm lemon juice
  • 36.40 gm extra virgin olive oil
  • 1 tsp grated lemon rind
Instructions:
  • Arrange the tomato, parsley, and mint beautifully on a large serving platter and generously sprinkle with the raspberry.
  • In a small bowl, mix the lemon juice and oil, season it, then drizzle the salad with the lemon dressing and sprinkle with lemon rind before serving.
