Orange thumbprint cookies with raspberry jam filling and a dusting of powdered sugar are a delightful dessert option.
Ingredients:
  • 1 cup butter, softened
  • 3/4 cup granulated sugar
  • 1 egg
  • 1 teaspoon grated orange peel
  • 1/2 teaspoon vanilla
  • 2 cups Gold Medal™ all-purpose flour
  • 1/2 teaspoon salt
  • Powdered sugar, if desired
  • 1/4 cup raspberry jam (or other favorite flavor)
Instructions:
  • In a large bowl, use an electric mixer to whip the butter until creamy. Add granulated sugar and beat until well combined. Mix in the egg, orange peel, and vanilla until fully incorporated. Gradually add flour and salt on low speed until fully mixed. Wrap the dough in plastic wrap and chill in the refrigerator for 1 hour.
  • Preheat the oven to 350°F and line a cookie sheet with parchment paper. Roll the dough into 1-inch balls and place them 2 inches apart on the cookie sheet. Use your thumb to make an indentation in the center of each cookie without pressing all the way through.
  • Bake for 12 to 15 minutes until light golden brown. If needed, gently remake indentations with the end of a wooden spoon. Transfer cookies from the baking sheet to a cooling rack right away and let them cool completely. Dust with powdered sugar and fill each thumbprint with approximately 1/4 teaspoon of jam.
