Low-fat raspberry & orange friands

Indulge in delicious, low-fat friands bursting with zesty orange and sweet raspberry flavors.
Ingredients:
  • Melted reduced-fat dairy spread, to grease
  • 75g (1/2 cup) plain flour
  • 75g (1/2 cup) self-raising flour
  • 125g (3/4 cup) icing sugar mixture
  • 100g almond meal
  • 5 egg whites
  • 1 x 140g container apple fruit puree
  • 30g reduced-fat dairy spread, melted
  • 2 tsp finely grated orange rind
  • 100g fresh raspberries or thawed frozen raspberries
  • Icing sugar mixture, extra, to dust
Instructions:
  • Preheat the oven to 200C. Lightly grease ten 125ml (1/2-cup) oval friand pans with melted butter and place them on a baking tray.
  • Combine the flours and icing sugar, then sift them into a large bowl. Mix in the almond meal.
  • Whip the egg whites until soft peaks form using an electric beater in a clean, dry bowl. Combine half of the egg whites, apple puree, melted dairy spread, and orange rind with the flour mixture using a large metal spoon until just combined. Repeat with the remaining egg whites, apple puree, melted dairy spread, and orange rind. Carefully fold in the raspberries.
  • Divide the mixture evenly among the greased friand pans. Bake in the preheated oven for 25 minutes or until a skewer comes out clean when inserted into the centers. Allow to cool in the pans for 5 minutes, then transfer to a wire rack. Dust lightly with extra icing sugar before serving.
