Ravioli Dolci (Sweet Ravioli)

Delicious bite-sized cookie ravioli filled with cherry preserves that everyone will love.
Ingredients:
  • 1 cup butter, softened
  • 0.66666698455811 cup white sugar
  • 1 egg, beaten
  • 1.5 teaspoons vanilla extract
  • 0.25 teaspoon almond extract
  • 1 teaspoon grated lemon zest
  • 2.5 cups all-purpose flour
  • 0.25 teaspoon baking soda
  • 0.125 teaspoon salt
  • 0.5 cup cherry preserves
  • 0.5 cup confectioners' sugar for dusting
Instructions:
  • Combine butter and sugar in a bowl until smooth. Add the egg, vanilla extract, almond extract, and lemon zest. Mix well. Gradually add the flour, baking soda, and salt until a smooth dough forms. Divide dough in half and roll out each between waxed paper to form a 12 inch square. Chill in the refrigerator for at least an hour.
  • Preheat the oven to 350°F (175°C) and lightly grease the cookie sheets.
  • Take one piece of dough from the refrigerator, discard the top layer of waxed paper, and slice it into 1 1/2 inch squares. Spoon approximately 1/4 teaspoon of cherry preserves onto the center of half of the squares. Set aside. Retrieve the second piece of dough from the refrigerator, discard the top layer of waxed paper, and cut it into 1 1/2 inch squares. Use a fork to poke holes in these squares for venting. Place a vented square over each filled square, gently pressing the edges with a fork to seal. Arrange cookies on prepared baking sheets with 2-inch spacing.
  • Bake in the preheated oven for 9 to 11 minutes until the edges are lightly browned. Let the cookies cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely. Dust warm cookies with confectioners' sugar.
