Authentic Italian pizza dough: stretchy, chewy, and flavorful. Makes four 9-inch pizzas, easily doubled and frozen.
Ingredients:
  • 4 cups all-purpose flour, or more as needed
  • 3.75 teaspoons fresh, compressed yeast
  • 1.25 cups water, at room temperature
  • 2.5 tablespoons extra-virgin olive oil
Instructions:
  • Preheat the oven to its lowest setting.
  • In the bowl of a stand mixer fitted with the dough hook attachment, combine 4 cups of flour and salt. Crumble the yeast into small pieces and add to the flour mixture. Slowly pour in water. Mix on low speed until dough starts to come together and form a ball, making sure to scrape the sides of the bowl. Drizzle in oil and mix until well combined.
  • Mix on low speed for 5-6 minutes, incorporating 1-2 tablespoons of extra flour if necessary. Shape dough into a ball using your hands, place it back in the bowl, score the top with an "x," and cover with a damp cloth.
  • Allow dough to rest and rise in the turned-off oven for a minimum of 1 hour, or up to 8 hours.
  • After removing the dough from the oven, attach the bowl back to the stand mixer. Uncover the dough and punch it down, then knead on low speed for 5 minutes.
  • Place a pizza stone or tray on the bottom oven rack and preheat the oven to 450 degrees F (230 degrees C).
  • Divide the dough into 4 equal pieces and shape each into a smooth ball. Lightly sprinkle with flour if necessary. Arrange the balls on a baking sheet and cover with a damp towel. Flatten each ball into a 9-inch round and add toppings as desired, using up to 1 cup of sauce per pizza.
  • Slide the pizza onto the heated pizza stone in the oven. Quickly reduce the temperature to 410 degrees F (210 degrees C) and bake for 10 to 12 minutes, adjusting as needed based on your chosen toppings. Repeat for any additional pizzas.
