Quick and easy Cheddar squash polenta side dish ready in just over 1 hour.
Ingredients:
  • cooking spray
  • 3 cups water
  • 1 cup polenta
  • salt to taste
  • 1 cup mashed butternut squash
  • 0.5 cup sour cream
  • 0.5 cup grated Cheddar cheese
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C), then give your casserole dish a light spritz with cooking spray.
  • Add water to the dish, then mix in the polenta and salt until well combined.
  • Bake the polenta in a preheated oven until thickened for about 40 minutes. Stir in the squash, sour cream, and Cheddar cheese. Return to the oven and bake until the cheese is melted for about 10 minutes. Allow it to rest for 10 minutes before serving.
