Delicious orange, cranberry, and pecan sheet cake bursting with flavor, no pudding mix required.
Ingredients:
  • 5 cups all-purpose flour
  • 3 cups white sugar
  • 4 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 2 teaspoons salt
  • 3 tablespoons dried grated orange peel
  • 0.75 cup orange juice concentrate
  • 1 tablespoon orange extract
  • 1.5 cups butter, softened
  • 2 (12 ounce) packages cranberries, rinsed and stems removed if necessary
  • 0.75 cup finely chopped pecans
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease a 10x14-inch baking pan.
  • 1. Combine flour, sugar, baking powder, baking soda, salt, and dried orange peel in a bowl. 2. In another bowl, mix orange juice concentrate, water, and orange extract. 3. Use a pastry cutter to blend butter into the flour mixture until combined. 4. Stir in orange juice mixture until evenly mixed. 5. Gently fold in cranberries and pecans. 6. Spread batter evenly in the baking dish.
  • Bake in the preheated oven until the top is golden brown, approximately 50 minutes. Lower the temperature to 325 degrees F (165 degrees C), cover the dish with foil, and continue baking until a knife inserted into the center of the cake comes out clean, for an additional 20 to 30 minutes.
