Upgrade your mac and cheese with a crunchy sourdough bread crumb topping and a rich, creamy sauce blending sharp Cheddar and smoked Gouda.
Ingredients:
  • 1 tablespoon salted butter
  • 2 (3/4 inch thick) slices sourdough bread, or more to taste
  • 1 serving cooking spray
  • 1 (16 ounce) package elbow macaroni
  • 4 cups freshly grated sharp Cheddar cheese
  • 2 cups freshly grated smoked Gouda cheese
  • 0.5 cup salted butter
  • 1.5 cups whole milk, divided
  • 2.5 tablespoons cornstarch
  • 2.5 cups half-and-half
  • 1 teaspoon pink Himalayan salt
  • 0.5 teaspoon ground white pepper
Instructions:
  • On a hot griddle, melt 1 tablespoon of butter and toast the bread for 1 to 2 minutes on each side until golden. Allow it to cool before serving.
  • Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking pan with cooking spray.
  • 1. Bring a large pot of lightly salted water to a boil, then cook the elbow macaroni until al dente, about 8 minutes. Drain and transfer to a large bowl.
  • Place the cooled toast in a resealable bag and gently crush using a saucepan or rolling pin to make breadcrumbs. Set aside.
  • Combine the savory Cheddar and creamy Gouda cheeses, then divide the mixture into 4 equal portions.
  • In a saucepan over medium heat, swirl and sizzle 1/2 cup of butter until melted and golden.
  • As the butter melts, combine 1 cup of milk with cornstarch in a bowl until smooth. Pour into the melted butter. Slowly stir in the remaining 1/2 cup of milk and half-and-half. Whisk constantly as you cook until the mixture thickens to a milkshake-like consistency, about 3 to 5 minutes. Add 2 portions of cheese, one by one, whisking until fully melted after each addition.
  • Drizzle the cheese sauce over the cooked macaroni and stir until coated. Transfer half of the mac and cheese mixture to the prepared baking pan and spread it out evenly. Sprinkle a layer of cheese on top. Add the remaining mac and cheese, sprinkle with the remaining cheese, and finish with the reserved breadcrumbs on top.
  • Bake until beautifully golden and bubbly in the preheated oven for 15-20 minutes.
