Red pepper, sweet corn, and blue cheese transform cheese balls into a patriotic delight. Perfect for Independence Day celebrations!
Ingredients:
  • 2 (8 ounce) packages cream cheese
  • 3 tablespoons butter, softened
  • 0.25 teaspoon kosher salt
  • 0.25 teaspoon freshly ground black pepper
  • 1 pinch cayenne pepper
  • 1 cup diced roasted red peppers
  • 2 cups fresh white corn kernels
  • 4 ounces blue cheese, crumbled
  • 0.5 cup chopped toasted almonds
  • 0.5 cup sliced fresh chives
  • 1 cup minced crisp-cooked bacon
Instructions:
  • In a mixing bowl, blend cream cheese, butter, salt, pepper, cayenne, roasted red peppers, corn, and blue cheese until fully mixed. Cover with plastic wrap and chill in the refrigerator for about 1 hour until cold.
  • Scoop tablespoon-sized balls of cheese mixture using a sorbet scoop or spoon onto a lined sheet pan. Chill in the refrigerator until firm, approximately 1 hour. Shape doesn't need to be perfect as they will be rolled in coatings later.
  • Roll chilled cheese balls in a mixture of almonds, chives, and bacon until well-coated. Shape into balls by rolling briefly in your hands. Chill in the refrigerator on a plate or pan until serving.
