Try Chef John's mini patriotic cheesecake bites for a bite-sized taste of summer.
Ingredients:
  • 1 pound cream cheese, at room temperature
  • 1 lime, zested
  • 1/2 cup white sugar
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour
  • 2 large eggs
Instructions:
  • Preheat the oven to 325 degrees F (165 degrees C). Grease 2 mini muffin tins with nonstick cooking spray, ensuring each cup is well coated, and place them on a sheet pan.
  • Combine graham cracker crumbs, 1 tablespoon sugar, butter, and 1/8 teaspoon vanilla extract in a bowl until the mixture resembles wet sand. Spoon a slightly rounded teaspoon of the mixture into each cup and spread evenly using a spoon.
  • Stack the muffin pans and gently press to compact the crumbs in each pan. Repeat for the second pan.
  • In a bowl, mix together cream cheese, lime zest, and 1/2 cup sugar until light and fluffy using an electric mixer or whisk. Stir in 1/2 teaspoon vanilla, flour, and 1 egg until smooth. Finally, whisk in the remaining egg until smooth.
  • Fill a piping bag with batter and evenly pipe it into the muffin tins, filling them to the top for perfectly shaped muffins. A piping bag ensures a cleaner and quicker process than using a spoon. Use a skewer to gently stir each cup and eliminate any air bubbles. Lightly tap the pan on the counter to settle the batter evenly.
  • Bake in a preheated oven for 20 to 25 minutes until the batter rises slightly and very small cracks appear on the surface. Note that the inner cheesecakes may cook more slowly and may not rise as high or crack.
  • Allow the cheesecakes to cool at room temperature for about 20 minutes. Then, remove them from the tins and refrigerate wrapped until fully chilled, for at least 30 minutes.
  • In a bowl, whisk cold cream until soft peaks begin to form. Incorporate sour cream and whisk until medium-stiff peaks are achieved. Finish by topping each cold cheesecake with whipped cream, 3 blueberries, and 1 strawberry slice.
