Grilled chicken breasts with spicy chili rub and blueberry sauce - a delicious summer BBQ dish!
Ingredients:
  • 1 tablespoon vegetable oil
  • 1 tablespoon kosher salt
  • 1 tablespoon paprika
  • 1 teaspoon ground dried chipotle pepper
  • 0.5 teaspoon cayenne pepper
  • 0.5 teaspoon freshly ground black pepper
  • 2 cloves minced garlic
  • 4 skinless, boneless chicken breast halves
  • 0.33333334326744 cup white sugar
  • 0.33333334326744 cup apple cider vinegar
  • 2 cups fresh blueberries
  • salt and freshly ground black pepper to taste
Instructions:
  • In a bowl, combine oil, salt, paprika, chipotle pepper, cayenne pepper, black pepper, and garlic. Add the chicken breasts and coat evenly in the marinade. Cover with plastic wrap and refrigerate for at least 2 hours.
  • In a saucepan over medium heat, spread sugar evenly without stirring. Watch closely as the sugar melts and turns a golden color, which should take about a minute. Once all the sugar has melted and the color darkens slightly, remove the pan from the heat. Add vinegar and stir until the sugar fully dissolves.
  • Heat a pan over medium-high heat, then combine blueberries with the sugar-vinegar mixture. Simmer until blueberries soften and the mixture thickens to a syrup-like consistency, about 4 or 5 minutes. Adjust the thickness as needed by adding more water if too thick, or simmering longer if too thin. Season with salt and pepper, then remove from heat.
  • Place a strainer over a bowl. Strain the berries, pressing with a spatula to extract all the juice, then discard skins.
  • Preheat the grill to medium-high heat and lightly oil the grate. Remove any excess marinade from the chicken.
  • Grill chicken breasts until cooked through and juices run clear, about 4 minutes per side. Ensure internal temperature reaches at least 165°F (74°C) using a thermometer. Rest on a plate for a few minutes before serving.
  • Present the chicken breasts on a bed of blueberry sauce with an extra drizzle of sauce over the top.
