Fourth of July themed no-bake bars with Corn Chex™ cereal and freeze-dried berries.
Ingredients:
  • 1/4 cup unsalted butter
  • 1 bag (10 oz) miniature marshmallows
  • 6 cups Corn Chex™ cereal
  • 1 cup mixed freeze-dried berries (strawberries, raspberries, blueberries), plus additional for topping
  • 1/3 cup plus 2 tablespoons white vanilla baking chips
  • 1 tablespoon coconut oil
Instructions:
  • Prepare your 8-inch square pan by generously spraying it with cooking spray and lining it with parchment paper, ensuring the paper overhangs on two sides for easy removal later.
  • In a 4-quart saucepan, melt butter and marshmallows over medium heat, stirring until smooth. Take off heat and mix in cereal and freeze-dried berries. Gently fold in 1/3 cup of chips (don't worry if they melt slightly). Press mixture evenly into pan and top with extra berries.
  • Combine 2 tablespoons of chips with coconut oil in a small microwavable bowl. Microwave uncovered in 30-second intervals until melted and smooth when stirred. Drizzle the mixture over the bars and allow to set for about 50 minutes before cutting into 4 rows by 3 rows.
