Colorful berry shortcake with fluffy white frosting.
Ingredients:
  • 1 quart strawberries, sliced
  • 1 pint fresh blueberries
  • 0.25 cup white sugar
  • 1 (8 ounce) package cream cheese, softened
  • 1 (7 ounce) container marshmallow creme
  • 2.3333332538605 cups baking mix (such as Bisquick ®)
  • 0.5 cup milk
  • 3 tablespoons white sugar
  • 3 tablespoons melted butter
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously grease an 8x8-inch square baking dish.
  • Combine strawberries, blueberries, and 1/4 cup of sugar in one bowl, then set aside. In a separate bowl, blend cream cheese with marshmallow creme until smooth, then set aside. Mix baking mix, milk, 3 tablespoons of sugar, and melted butter in another bowl to create a smooth batter. Pour the batter into the baking dish.
  • Bake in the oven until lightly golden brown on top, about 12 to 15 minutes. Let it cool in the pan.
  • Cover the cooled shortcake with the berry mixture and juice, reserving some berries for garnish. Using a spatula, gently press down on the berries to help soak the cake. Top with the cream cheese mixture and decorate with the saved berries. Chill in the fridge for at least 30 minutes before cutting into squares to serve.
