Spicy deviled eggs - ideal for patriotic parties!
Ingredients:
  • 3 drops red gel food coloring
  • 0.66666668653488 cup water, or as needed
  • 2 drops blue gel food coloring
  • toothpicks
  • 8 hard-cooked eggs, peeled
  • 2.5 tablespoons mayonnaise
  • 1 tablespoon hot prepared horseradish
  • 1 teaspoon rice vinegar
  • 0.125 teaspoon salt, or to taste
  • 1 pinch fresh-ground black pepper
  • 0.25 teaspoon smoked hot paprika
  • 1 teaspoon snipped fresh chives
Instructions:
  • In separate ramekins, blend red food coloring with 1/3 cup water and do the same with the blue food coloring.
  • Carefully insert 3 or 4 toothpicks about 1/4-inch deep through the center of the egg and dip one end in one dye. Be mindful not to pierce the egg too deeply to avoid breakage later. Allow the egg to stand for 5 to 10 minutes to achieve your desired color intensity. Next, dip the opposite end of the egg into the other dye for red, white, and blue bands. Repeat with the remaining eggs and let them dry on paper towels.
  • Slice hard-boiled eggs in half lengthwise, saving the whites for later. Pass the yolks through a sieve into a bowl or use a potato ricer.
  • Combine mayonnaise, horseradish, rice vinegar, salt, and pepper with the yolks until creamy. Season to taste. Pipe filling into a bag with a large star tip.
  • Fill each egg white half with the filling. Dust each egg half with smoked paprika using a fine mesh strainer. Sprinkle with chives and refrigerate until serving.
