Red cabbage

Delicious red cabbage dish - great hot or cold with meat and cheese. Perfect for leftovers!
Ingredients:
  • 1 red cabbage (1kg)
  • 4 rashers of higher-welfare smoked streaky bacon
  • olive oil
  • 2 eating apples
  • 2 sprigs of rosemary
  • 1 heaped teaspoon fennel seeds
  • 100 g dried prunes
  • 1 clementine
  • 6 tablespoons balsamic vinegar
Instructions:
  • Prepare the cabbage by removing outer leaves, trimming the base, cutting into wedges, and finely slicing. Slice the bacon and cook with oil in a large casserole pan until crispy. Peel, core, and dice the apples. Add rosemary leaves and stir for 1 minute. Remove crispy bacon and rosemary from the pan. Keep the bacon fat. Add fennel seeds, diced apples, torn prunes (without stones), and cook for 2 minutes. Grate clementine zest and squeeze the juice in. Add vinegar, cabbage, salt, and pepper. Cook covered on low heat for 20-25 minutes, stirring every 5 minutes. Serve with crispy bacon and rosemary on top.
