Red curry salmon linguine recipe

Creamy Thai red curry pasta - a tantalizing fusion of bold flavors, irresistible and oh so easy to devour.
Ingredients:
  • 500g linguine
  • 4 Skinless Salmon Portions
  • 1 red capsicum, seeded, thinly sliced
  • 2 zucchini, thinly sliced diagonally
  • 1 red onion, finely chopped
  • 75g curry paste
  • 500ml fish stock
  • 500ml coconut milk
Instructions:
  • In a large heavy-based saucepan, mix together the pasta, salmon, capsicum, zucchini, onion, curry paste, stock, coconut milk, and ½ cup (125ml) water.
  • Heat the mixture over medium heat until it simmers. Stir occasionally and cook for about 20 minutes, or until the pasta is cooked to al dente perfection.
