Salmon red curry

Quick and flavorful red curry with nutritious salmon, perfect for busy weeknights and loved by the whole family.
Ingredients:
  • 3 (about 200g each) skinless salmon fillets, cut into 3cm pieces
  • 1 red onion, cut into wedges
  • 5cm-piece ginger, cut into matchsticks
  • 100g curry paste
  • 400ml can coconut milk
  • 200g cherry tomatoes
  • 1 bunch choy sum, halved
  • 42.00 gm lime juice
  • 8.00 gm brown sugar
  • 12.20 gm fish sauce
  • 300g jasmine rice
  • Coriander sprigs, to serve
Instructions:
  • Preheat a wok or large frying pan over high heat. Quickly sear the salmon in batches for 2 minutes until golden brown. Place in a bowl.
  • Sauté the onion and ginger in a wok or pan until golden brown, about 2 minutes. Stir in the curry paste and cook until aromatic, about 1 minute. Pour in the coconut milk and bring to a simmer.
  • Add the salmon back to the wok or pan along with the tomatoes and choy sum. Cook for 2 minutes or until heated. Remove from heat and stir in lime juice, sugar, and fish sauce. Season to taste and serve right away with rice and coriander sprigs.
