Ingredients:
  • 1 brown onion, finely chopped
  • 2 garlic cloves, crushed
  • 500g orange sweet potato (kumara), peeled, cut into 2cm pieces
  • 110g (1/2 cup) dried split red lentils
  • 875ml (3 1/2 cups) vegetable liquid stock
  • 1 zucchini, coarsely grated
  • Plain savoury biscuits or bread, to serve
Instructions:
  • In a large saucepan over medium heat, heat the oil until shimmering. Add the onion and garlic, stir frequently, and cook for about 3 minutes until the onion begins to soften.
  • Combine the sweet potato, lentils, and stock in the pan, stirring well. Increase the heat to high and bring it to a boil. Lower the heat to medium, cover, and cook for 20-25 minutes, stirring occasionally, until the lentils are tender.
  • Add zucchini to the mixture and simmer for 5 minutes without covering. Serve alongside biscuits or bread.
