Hearty spiced carrot, apple, sweet potato, lentil soup - a cozy winter comfort.
Ingredients:
  • 0.25 cup butter
  • 2 large sweet potatoes, peeled and chopped
  • 3 large carrots, peeled and chopped
  • 1 apple, peeled, cored and chopped
  • 0.5 cup red lentils
  • 1 teaspoon salt
  • 0.5 teaspoon minced fresh ginger
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon chili powder
  • 0.5 teaspoon paprika
  • 4 cups vegetable broth
Instructions:
  • In a large, heavy-bottomed pot over medium-high heat, melt butter. Add sweet potatoes, carrots, apple, and onion. Cook and stir until onion is translucent, approximately 10 minutes.
  • Combine lentils, salt, ginger, pepper, cumin, chili powder, and paprika in the pot, then add the broth. Bring to a boil over high heat. Reduce heat to medium-low, cover, and simmer for about 30 minutes until lentils and vegetables are tender.
  • Use an immersion blender to purée the soup in the pot until smooth. Increase heat to medium-high and simmer for about 10 minutes. Adjust consistency by adding water as desired.
