Savor a refreshing vegan red lentil salad tossed with herbs, scallions, tomatoes, and a zesty olive oil lemon dressing.
Ingredients:
  • 1 (14.5 ounce) can vegetable stock
  • 7 ounces red lentils, picked over and rinsed
  • 1 cup minced fresh parsley
  • 0.5 cup minced fresh mint
  • 2 medium chopped green onions, white and green parts separated
  • 2 medium Roma tomatoes, seeded, diced
  • 0.25 cup extra-virgin olive oil
  • 1 medium lemon, zested and juiced
  • salt to taste (optional)
Instructions:
  • In a saucepan, heat vegetable stock until boiling, then add drained lentils. Stir and simmer uncovered for 7 to 8 minutes until lentils are slightly undercooked. Drain and let cool for about 30 minutes.
  • In a large mixing bowl, combine cooled lentils with minced fresh parsley, mint, and the white parts of the green onions, leaving the chopped greens for garnish. Mix in the tomatoes.
  • In a small bowl, mix extra-virgin olive oil with lemon zest and juice. Pour this flavorful dressing over the salad and toss well. Chill in the refrigerator for at least 30 minutes before serving.
  • Adjust seasoning to your liking by tasting and adding salt if needed. Sprinkle with the vibrant chopped green tops of green onions for a beautiful garnish before serving.
