Red oak leaf, goat's cheese & macadamia salad

Ingredients:
  • 2 red oak leaf lettuces
  • 350g butter beans
  • 80g pkt baby rocket leaves
  • 100g macadamia nuts, toasted, roughly chopped
  • 110g goat's cheese, crumbled
  • 60ml macadamia
  • 20.00 ml balsamic vinegar
  • 1 small shallot, finely chopped
  • Salt & freshly ground pepper
Instructions:
  • Wash and gently dry the lettuce leaves, then tear them into pieces and add to a large bowl.
  • Boil beans in a saucepan for 2 minutes until tender. Drain, cool under cold water, and pat dry. Combine with lettuce, rocket leaves, macadamia nuts, and goat's cheese.
  • Combine all the dressing ingredients and whisk until smooth.
  • Drizzle the dressing over the salad before serving.
