Red Rice and Sausage

Charleston-inspired red rice with flavorful turkey or Italian sausage.
Ingredients:
  • 2 cups long grain white rice
  • 3 slices turkey bacon
  • 1 onion, chopped
  • 1 teaspoon minced garlic
  • 1 green bell pepper, seeded and chopped
  • 1 (16 ounce) package smoked turkey sausage, halved and sliced
  • 1 (14.5 ounce) can stewed tomatoes, drained
  • 1 (14 ounce) jar spaghetti sauce
  • dried Italian seasoning to taste
  • salt and pepper to taste
Instructions:
  • Place the rice and water in a saucepan, bringing it to a boil. Then cover, lower the heat, and simmer for 15 to 20 minutes until the rice is tender and water is absorbed. Set aside.
  • Preheat the oven to a toasty 350 degrees F (175 degrees C).
  • First, heat a large skillet over medium heat. Add bacon, cook until browned on each side. Then, add onion, garlic, and green peppers to the skillet. Cook until softened, stirring frequently. Add sausage, heat through, then add tomatoes. Heat through. Stir in cooked rice and spaghetti sauce. Season with Italian seasoning, salt, and pepper. Transfer the mixture to a large casserole dish, cover with a lid or aluminum foil.
  • After baking covered for 1 hour in the preheated oven, uncover and bake for an extra 15 minutes.
