Red velvet cake with pureed beets for moisture, vibrant color, and deliciousness, perfect on its own or with frosting.
Ingredients:
  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1.5 cups white sugar
  • 1 cup buttermilk
  • 1 cup pureed cooked beets
  • 0.5 cup vegetable oil
  • 2 tablespoons unsweetened cocoa powder
  • 1 tablespoon red food coloring
  • 1 teaspoon vinegar
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and elegantly line a 9x13-inch cake pan with parchment paper.
  • Combine the flour and baking powder by sifting them in a large bowl.
  • Combine sugar, buttermilk, beets, oil, eggs, cocoa powder, red food coloring, vanilla extract, vinegar, baking soda, and salt in a large bowl. Gradually mix in the flour mixture, stirring until just combined. Pour batter into pan and tap to remove bubbles.
  • Bake until a toothpick inserted into the center comes out clean, about 35 minutes in the preheated oven.
