Quick and delicious microwave red velvet cake with creamy cream cheese frosting.
Ingredients:
  • PAM® Original No-Stick Cooking Spray
  • 2 cups Reddi-wip® Original Dairy Whipped Topping
  • 0.25 cup Egg Beaters® Original
  • 0.5 cup dry red velvet cake mix
  • 3 tablespoons reduced-fat cream cheese spread
  • 4 tablespoons Reddi-wip® Original Dairy Whipped Topping
  • 1 tablespoon granulated sugar
Instructions:
  • Prepare 2 large microwave-safe mugs by coating them with cooking spray. In a medium bowl, combine 2 cups of Reddi-wip, Egg Beaters, and cake mix. Divide the batter evenly into the mugs. Microwave each mug on HIGH for 1 to 1 minute 15 seconds, or until the cake is set.
  • Prepare the frosting by combining cream cheese spread, 2 servings of Reddi-wip, and sugar in a small bowl until smooth. Flip each cake onto a plate and spread half of the frosting on top of each.
