Red Velvet White Chocolate Chip Cookies

Decadent red velvet cupcakes with creamy white chocolate frosting ready in 25 minutes.
Ingredients:
  • 1/2 cup salted butter, softened
  • 1 cup packed light brown sugar
  • 2 teaspoons vanilla
  • 1 egg
  • 2 teaspoons red gel or liquid food color (use 2 1/2 teaspoons if needed)
  • 1 3/4 cups Original Bisquick™ mix
  • 1/4 cup unsweetened baking cocoa
  • 1 cup white vanilla baking chips (add 1/2 cup more if desired)
Instructions:
  • Preheat the oven to 350°F and prepare 2 cookie sheets with silicone baking mats or parchment paper.
  • In a large bowl, use an electric mixer to beat together butter, brown sugar, vanilla, egg, and food color until light and fluffy. Gradually add Bisquick mix and baking cocoa, beating on low speed until just combined. Stir in chips.
  • Spoon dough onto cookie sheets in rounded tablespoonfuls, keeping them 2 inches apart.
  • Bake for 8 minutes until slightly underdone. Allow the cookies to cool on the baking sheets for 5 minutes, then transfer to cooling racks.
