Rhubarb & berry cobbler

Cozy, flavorful winter dessert that's low-fat and affordable.
Ingredients:
  • 1 bunch rhubarb, trimmed, cut into 4cm lengths
  • 300g Frozen fresh mixed berries
  • 20.00 ml plain flour
  • 60.00 gm caster sugar
  • 160g plain flour
  • 8.00 gm baking powder
  • 50g low-fat dairy spread
  • 185ml buttermilk
  • No fat vanilla custard, to serve
Instructions:
  • Preheat the oven to 180°C. Combine rhubarb, frozen berries, plain flour, and half of the caster sugar in a large bowl. Transfer the fruit mixture to a 20cm square ovenproof dish and set aside.
  • In a large bowl, mix wholemeal flour, baking powder, and the rest of the sugar. Use your fingers to blend in the margarine until the mixture resembles breadcrumbs. Pour in the buttermilk and stir with a wooden spoon until a soft dough forms.
  • Divide the dough into 16 equal portions, shaping each into a ball and gently flattening them. Place the dough on top of the fruit, then bake for 45 minutes until the top is golden and the juices are bubbling. Serve alongside the custard.
