Rhubarb bellini

Elevate your bellini with a British twist using tangy rhubarb for a refreshing cocktail.
Ingredients:
  • 300 g rhubarb trimmed and finely sliced
  • 75 g sugar
  • 1 bottle Prosecco or Champagne
Instructions:
  • In a small pan, combine rhubarb, sugar, and 2 tablespoons of water. Cover and bring to a boil, then simmer for a couple of minutes. Uncover and simmer until thickened, stirring occasionally. Blend into a smooth purée. Cool, divide into six glasses, and top with chilled Prosecco or Champagne, stirring as you pour. Cheers! Optional: Chill the bubbly in the freezer for 40 minutes before serving on a hot day. Enjoy!
