Delicious and wholesome rhubarb bran muffins perfect for snacking.
Ingredients:
  • 250.00 ml oat bran
  • 187.50 gm boiling water, plus 1 tbsp extra
  • 6 stalks rhubarb, trimmed, chopped
  • 118.80 gm brand brown sugar
  • 1 egg, lightly beaten
  • 36.80 gm vegetable oil
  • 150.00 gm self-raising flour, sifted
  • 64.38 gm milk
Instructions:
  • In a bowl, mix oat bran with boiling water and let it sit for 20 minutes until absorbed.
  • Preheat your oven to 200C (180C fan). Line 10 holes of a 1/3-cup muffin pan with paper cases.
  • In a bowl, mix together rhubarb, 1 tablespoon of brown sugar, and boiling water until well combined.
  • In a large bowl, combine the rest of the brown sugar with the egg and oil, whisking until smooth. Mix in the bran mixture. Fold in the flour, milk, and half of the chopped rhubarb until just combined. Spoon the batter into paper cases.
  • Sprinkle the rest of the rhubarb over the top and bake for 25-30 minutes until the muffins spring back when gently pressed. Allow to cool on a wire rack.
