Unique Rhubarb Pie with layered cream cheese and vanilla sour cream topping.
Ingredients:
  • 1 (9 inch) unbaked pie shell
  • 0.33333334326744 cup white sugar
  • 1 tablespoon all-purpose flour
  • 2 cups chopped fresh rhubarb
  • 1 (8 ounce) package cream cheese, softened
  • 2 eggs
  • 1 cup sour cream
  • 2 tablespoons white sugar
Instructions:
  • Preheat the oven to 425 degrees F (220 degrees C) and gently fit an unbaked pie crust into a 9-inch pie plate.
  • Combine flour and sugar in a medium bowl, then mix in rhubarb until coated before transferring to the pie shell.
  • After baking for 15 minutes in the preheated oven, combine cream cheese, 1/3 cup sugar, and eggs until smooth. Pour the mixture over the rhubarb and continue baking.
  • Lower the oven temperature to 350 degrees F (175 degrees C), then bake the pie for an additional 30 minutes. While the pie bakes, mix together the sour cream, 2 tablespoons of sugar, and vanilla until smooth. Once the pie is done, spread this mixture over the top immediately. Let it cool, then slice into wedges and serve.
