Rhubarb Cheesecake Dream Bars

Delicious rhubarb dessert with layers of buttery crust, baked cream cheese, and sour cream in one bowl. Easy to make with rhubarb and pantry staples.
Ingredients:
  • 0.5 cup butter, softened
  • 1 tablespoon white sugar
  • 1 cup white sugar
  • 0.25 cup all-purpose flour
  • 4 cups finely chopped rhubarb
  • 1 (8 ounce) package cream cheese, softened
  • 0.5 cup white sugar
  • 1 egg
  • 0.5 cup sour cream
Instructions:
  • Preheat your oven to a toasty 425 degrees F (220 degrees C) and grease an 11x7-inch baking dish.
  • Combine 1 cup flour, softened butter, and 1 tablespoon sugar in a bowl, then press mixture into the prepared baking dish.
  • Bake the crust in the preheated oven until lightly browned, approximately 10 minutes. Remove the crust from the oven and reduce the temperature to 350 degrees F (175 degrees C).
  • In the same bowl, combine 1 cup sugar and 1/4 cup flour, then toss in the rhubarb until coated. Spread the rhubarb mixture over the baked crust. In the same bowl, mash together cream cheese, 1/2 cup sugar, and egg until creamy; spread over the rhubarb layer.
  • Bake in the oven for about 35 minutes until the rhubarb is bubbling and the topping is set.
  • Combine sour cream with a tablespoon of sugar in the same bowl and spread over the hot dessert. Let it cool completely before cutting into bars. Store any remaining bars in the refrigerator.
