Refreshing Rhubarb Collins: Rhubarb, brown sugar, gin, and lemon seltzer combine for a tasty twist on a classic cocktail.
Ingredients:
  • 0.25 cup thinly sliced rhubarb
  • 1 teaspoon brown sugar
  • 3 ounces gin
  • 1 (12 fluid ounce) can lemon-flavored seltzer water
Instructions:
  • Crush rhubarb and brown sugar together in a mixing glass until muddled.
  • Pour the gin into the mixture and gently mix until the sugar is fully dissolved. Using a strainer, pour the mixture into 2 glasses filled with ice. Finish by topping each glass with seltzer.
