Indulgent rhubarb bars with a buttery crust and tangy rhubarb filling. A perfect treat for rhubarb lovers!
Ingredients:
  • 0.66666668653488 cup confectioners' sugar
  • 3 cups white sugar
  • 1.5 teaspoons salt
  • 0.5 cup all-purpose flour
  • 4 eggs, beaten
  • 4.5 cups chopped fresh rhubarb
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C). Combine 2 cups of flour, confectioners' sugar, and butter in a medium bowl until a dough forms, with butter in small crumbs. Firmly press the mixture into the bottom of a 9x13-inch baking dish.
  • After 10 minutes in the preheated oven, combine white sugar, salt, flour, and eggs in a large bowl. Add rhubarb and mix well. Spread evenly over the baked crust once it's done.
  • Continue baking in the preheated oven for an additional 35 minutes, or until the rhubarb is tender. Once done, allow it to cool before cutting into squares for serving.
