Rhubarb cake with a hint of cinnamon for a subtly sweet treat.
Ingredients:
  • 2 cups chopped rhubarb
  • 1 pinch ground cinnamon, or more to taste
  • 0.25 cup butter, softened
  • 0.75 cup white sugar
  • 2 eggs
  • 0.5 cup milk
  • 1 teaspoon vanilla extract
  • 1.25 cups all-purpose flour
  • 1 teaspoon baking powder
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously grease a deep pie dish.
  • Start by layering the rhubarb in the bottom of the pie dish and dusting it with cinnamon. Cream together the butter and sugar until smooth, then mix in eggs, milk, and vanilla extract until well combined. In a separate bowl, combine the flour and baking powder, then fold it into the butter mixture. Spread the batter over the rhubarb in the pie dish.
  • Place the dish in the preheated oven and bake until the crust is lightly browned and the rhubarb is bubbling, which should take around 45 minutes. Enjoy warm.
