Try this amazing rhubarb margarita for a perfect balance of sweet and tart flavors!
Ingredients:
  • 4 cups diced rhubarb
  • 0.5 cup water
  • 4 cups ice
  • 0.66666668653488 cup tequila
Instructions:
  • In a saucepan, gently simmer rhubarb with water until soft and juicy, about 15 minutes.
  • Strain the juice and press the pulp to extract all the liquid. Discard the pulp and stir in the sugar to the hot juice. Chill the rhubarb syrup until very cold, at least 2 hours.
  • In a blender, combine ice, tequila, and rhubarb syrup. Blend until smooth. Pour into chilled margarita glasses and serve.
