Rhubarb Shortbread Bars

Tantalizing dessert bars with tangy-sweet custard on a buttery crust. Perfect with a scoop of vanilla ice cream.
Ingredients:
  • 1 cup all-purpose flour
  • 0.5 cup butter, softened
  • 5 tablespoons confectioners' sugar
  • 1 cup brown sugar
  • 2 eggs, beaten
  • 0.5 cup white sugar
  • 0.25 cup all-purpose flour
  • 0.75 teaspoon salt
  • 2 cups 1/4-inch slices rhubarb
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • Combine 1 cup flour, butter, and confectioners' sugar in a bowl, then press firmly into the bottom of a 9-inch square baking dish.
  • Place in a preheated oven and bake until the crust is lightly hardened and very fragrant, but not browned yet, for approximately 15 minutes.
  • Combine brown sugar, eggs, white sugar, 1/4 cup flour, and salt in a bowl and whisk until smooth. Stir in rhubarb until coated, then pour over the crust.
  • Bake the rhubarb mixture in the oven for about 40 minutes until it sets; then let it cool for at least 10 minutes before cutting into bars.
