Rhubarb Spice Cake

Spiced cakes with sweet whipped cream, ideal for any dessert.
Ingredients:
  • 2 cups Gold Medal™ all-purpose flour*
  • 1 1/2 cups sugar
  • 1/2 cup vegetable oil
  • 1/3 cup water
  • 1 1/4 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon ground nutmeg
  • 3 large eggs
  • 1 3/4 cups finely chopped fresh rhubarb
  • 1 cup chopped nuts
  • Sweetened Whipped Cream, if desired
Instructions:
  • Preheat the oven to 350°F and prepare a 13x9-inch pan by greasing the bottom and sides with shortening and lightly flouring.
  • In a large bowl, combine flour, 1 1/4 cups sugar, and the rest of the ingredients (excluding rhubarb, nuts, and whipped cream). Use an electric mixer on low speed for 1 minute, scraping the bowl constantly. Increase the speed to medium and beat for 2 minutes, scraping the bowl occasionally. Fold in the rhubarb and then pour the mixture into the pan. Top with nuts and sprinkle the remaining 1/4 cup sugar.
  • Bake for 45 to 50 minutes until a toothpick inserted in the center comes out clean. Allow to cool completely for about 1 hour. Serve with sweetened whipped cream.
