Rhubarb Upside Down Cake II

Kid-friendly rhubarb summer upside-down cake with strawberry gelatin, marshmallows, and cake mix. Delightful and easy to make together!
Ingredients:
  • 2 tablespoons butter
  • 4 cups diced rhubarb
  • 1 (3 ounce) package strawberry flavored Jell-O® mix
  • 2 cups miniature marshmallows
  • 1 (18.25 ounce) package white cake mix
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously spread butter at the base of a 9x13 inch pan.
  • Lay out the rhubarb evenly on the pan, followed by a dusting of sugar and the strawberry gelatin mix. Top with a layer of miniature marshmallows. Prepare the cake mix as directed on the package and spread it over the marshmallows.
  • Bake in the preheated oven for 40 to 50 minutes until a toothpick inserted in the center comes out clean. Let it cool.
