Easy and delicious rhubarb upside-down cake made with cake mix, rhubarb, sugar, and marshmallows.
Ingredients:
  • 1 (18.25 ounce) package yellow cake mix
  • 6 cups chopped rhubarb
  • 1 cup white sugar
  • 3 cups miniature marshmallows
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease a 9x13-inch pan.
  • Spread a layer of chopped rhubarb on the bottom of the prepared pan, then evenly sprinkle sugar over the rhubarb and top with marshmallows.
  • Follow the cake mix instructions on the package, then pour the mixture over the rhubarb and marshmallows in the pan.
  • After baking in the preheated oven for 1 hour, allow the dish to cool in the pan for 10 minutes before flipping it onto a serving dish, ensuring the rhubarb is on top.
