Delicious veggie burger made with rice and beans, ready in just 30 minutes.
Ingredients:
  • 1 can (15 oz) red kidney beans, drained, rinsed
  • 1 medium onion, finely chopped (1/2 cup)
  • 1/4 cup finely chopped celery
  • 1/4 cup soft whole wheat bread crumbs
  • 2 tablespoons chopped fresh cilantro
  • 1 clove garlic, finely chopped
  • 1/2 teaspoon dried oregano leaves
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon pepper
  • 3/4 cup cooked brown rice
  • 4 whole wheat hamburger buns, split, toasted
  • 2 tablespoons fat-free mayonnaise
  • Fresh spinach leaves, sliced tomato and red onion, if desired
Instructions:
  • In a medium bowl, gently crush beans with a potato masher or fork. Mix in chopped onion, celery, bread crumbs, cilantro, garlic, oregano, cumin, salt, and pepper. Add rice and form 4 patties, each 1/2 inch thick.
  • Preheat grill pan or skillet over medium heat, then cook the patties for 10 to 12 minutes, flipping once, until fully heated through.
  • Spread mayo on bun bottoms. Add burgers, tomato, spinach, and red onion. Cover with bun tops.
